In graphic design one size does not fit all. I feel that you are
describing a corporate logo for a client who sells Italian food.
I dont design logos in photoshop, everything you
see here was made in illustrator. The colour combinations should
not confuse you as this is obviously an Italian restaurant using
the Italian colours. Logos come in all shapes and sizes, if you
can illustrate many clients ask for a more detailed logo rather
than text based logos or iconic logo. When you receive a new client you cant simply start an iconic or text based logo, you need to assess their audience and hear what the client is asking for. If the client wants an illustrated logo with italian colours you make it work for them, or you teach them a better way.
In regards to people not knowing the Italian
colours, i extremely disagree as the Italian flag is probably the
most well known in the world due to all the Italian restaurants.
You have many great points though many do not relate to this logo. The kerning you mentioned is spot on, this logo does need proper Kerning.
